Besan Ladoo is the first of the two recipes that I plan to post for Diwali 2013. Although, it is not particularly a Diwali sweet as such, I decided to make it a part of my simple Diwali menu.

Yummy Ladoos for Diwali

Diwali is a Hindu festival of lights. Most parts of India are immersed in a festive environment with family gatherings, feasts and fireworks. The lights and fireworks signify the expulsion of vices and darkness from life & the welcoming of virtues, light and prosperity.

There are a few typical sweets, savories and dishes prepared as a part of the celebrations. I already made a couple of these for the festival this upcoming weekend. Here is my

Besan Ladoo Recipe

BESAN LADOO | SWEET CHICKPEA SPHERES

Prep Time: 25 minutes

Cook Time: 10 minutes

Serves: 6-8

BESAN LADOO | SWEET CHICKPEA SPHERES

Ingredients

  • 1/2 cup ghee (clarified butter)
  • 1 1/4 cup besan (chickpea flour)
  • 3/4 cup powdered sugar
  • 1 tsp crushed green cardamom
  • 2 tbsp almond powder
  • 1 tbsp slivered pistachios
  • 1 tbsp ghee (for making the ladoos)

Directions

  1. Take 1/2 cup ghee in a pan over low heat.
  2. Add besan & roast on low heat only.
  3. Keep stirring to prevent burning of flour.
  4. After about 8-10 min, the flour turns a deep colour and begins to emit a sweet fragrance.
  5. Take the pan off heat and let it cool down to room temperature.
  6. Add powdered sugar, cardamom powder and mix well.
  7. Smear ghee onto your palms and start making ping pong ball sized spheres out of the flour-sugar mixture.
  8. Garnish with almond powder and slivered pistachios.
  9. They can be stored in an airtight container without refrigeration for about a fortnight.

My Take:

The roasted flour has to cool down completely before adding the sugar. If not, the ladoos would turn out hard.

I like my sweets on the less sugary side. The quantity of sugar in the recipe can be increased to 1 cup if desired.
