Broccoli Tofu Salad

The other day, I received an email from a reader thanking for a cauliflower recipe and how she had never cooked a cauliflower before. Like ever! Growing up, we had so much cauliflower at home, ate them as street-food from hawkers, ate them at fancy restaurants, I never imagined that cauliflower could be so, alien, a concept elsewhere in the world! That is one of my favorite things about blogging; interacting with so many of you and learning new things that never cease to amaze me!

How to cook Broccoli

Cooking cauliflower might not have been an alien concept to us but tofu and broccoli definitely topped the list! While broccoli was just a Martian (Inhabitants of Planet Mars are green in color, aren’t they?) cousin of the humble Earthling cauliflower and Tofu was just glorified everyday Indian paneer ( at least, that’s what it was propagandized to be), it was introduced into the Indian markets not until a few years ago. Even when it was introduced, it was priced so high that it graced the elite households only or on a special occasion or celebration in a middle-class home. Ya! I know! Broccoli and tofu for a celebration! I cannot stop laughing about it now 😀

Crispy Tofu salad

Back to the broccoli tofu salad recipe, did I tell you that the mister and me are trying our best to eat healthy? I think I did. Anyway, salads are a part of our dinners on most days of the week now. Some days, it is just some sliced cucumbers with salt and a squeeze of lemon, some days it is dressed up cucumbers like this one here and then there are days there is a nice fancy salad like this broccoli tofu salad.

Did you notice that? That I called this salad, fancy? Probably because they were such grand ingredients when I first learnt of their existence, a broccoli tofu salad will always be fancy for me! 🙂

Broccoli Tofu Salad

Oh! There are soups too that decorate our meals on some days but for now, here is the recipe for:

Broccoli Tofu Salad

Prep Time: 12 minutes

Cook Time: 10 minutes

Total Time: 25 minutes

Serves: 2-3

    For the Salad
  • 7 Oz / 200 g extra firm Tofu
  • 2 cups Broccoli florets
  • 3/4 Pomegranate seeds
  • 1/4 cup Pine nuts
  • 1 1/2 tbsp olive oil
  • Salt to season
  • 1 tsp Thyme, dried and crushed
  • 1/2 tsp Crushed black pepper (more or less to suit your taste)
  • For the Dressing
  • 1/8 cup Sriracha
  • 1/4 cup Light mayonnaise
  • 1/2 tbsp Olive oil

  1. Cut the extra firm tofu into cubes.
  2. Place the tofu cubes on some paper towels. Cover them with more paper towels. Place some weight on it and let the tofu drain off the excess water.
  3. Heat up a pan and dry roast pine nuts until they change color lightly and you can smell a toasty, nutty aroma.
  4. Set the pine nuts aside.
  5. Heat 1/2 tbsp of oil in the pan and add the broccoli in. Sauté for just about a couple of min. Add some salt, 1/4 tsp crushed black pepper and 1/2 tsp thyme.
  6. Mix and take the broccoli off the heat.
  7. Add one tbsp. oil into the pan and place the drained tofu cubes in the oil. Roast the tofu on both sides until golden and crisp.
  8. Add the rest of the crushed black pepper and dried thyme and toss well before taking the tofu off the heat.
  9. Toss the tofu, broccoli, pomegranate seeds and toasted pine nuts together.
  10. Whisk together the ingredients for the dressing. And top the salad with it.
  11. Serve immediately.

My Take:

You can skip the drying and crisping up of tofu steps if you wish. However, I like the crunch offered by crisp tofu skin.

You can also steam or blanch the broccoli instead of pan roasting it.

  8. This was great! Used egg instead of tofu and decided not to make the dressing with it, but it all balances out! Great idea.
