Phulka Tacos! The next under the “Makeovers for Leftovers” series, soft, foldable phulkas to these crunchy hard shell tacos have stolen my heart, mind, tongue and whatever else too! Raw mango Salsa reminds me of the streets of India where the hawkers sell their wares from a hand-crafted bamboo basket. A hot summer day, soaring temperature and the sun shows no mercy. Every time I walk into a super market and find red round juicy tomatoes with their greens intact, I want to pick up the whole lot! I am a big fan of tomatoes. I love the variety in which Mother Nature makes them, red, green, round, oval. They can spruce up any dish! You just got to understand that each variety has its own strong suit!  Some are sour, some are sweet, and some are just bland colourful fruits.
