Mango Mousse Cake is the best layered fruit cake. EVER! Actually, those are not my words. That’s Nachiket speaking. He LOOOOVVVEES mangoes and my Mango Mousse cake. Mango, often called the “King of Fruits” in India, is served in a variety of ways and as a part of many dishes. Entrées, sides, smoothies, desserts; you name it and you can make it! Its almost like the mango adjusts itself to perfection; like it does not want you to go wrong with it. Mousse cakes not only taste amazing but they also look gorgeous! The first time I made this for a… Continue reading

Dark, Luscious and sinful Chocolate Lava cake is the recipe I would like to share for the last of the series “RAVISHING TUESDAYS”.  Why did I choose this? Just a grand finale and the fact that tomorrow is Christmas with the new year lurking just around the corner… you can’t say no to desserts!   I can either go over the benefits of cocoa or explain why it is great for your skin like I have for the past 4 Tuesdays or move ahead because “Chocolate is not only good for your heart and uplifts your moods but is also… Continue reading

CHOCOLATE COVERED KIWI POPS

FacebookTwitterEmailYummlyTumblrStumbleUponWhatsAppGoogle+

These chocolate covered kiwi pops are tiny frozen treats made with fresh fruit coated with a layer of velvety rich dark chocolate. You know the punch line “No one can eat just one”? In my opinion (and in your opinion too, once you taste these charming babies), it actually sings for these chocolate covered kiwi pops, I definitely was not able to stop at one! Or two! Or three… Well, let’s just say, I ate a few! 😛 Continue reading

RASMALAI – A ROYAL DESSERT

Rasmalai
FacebookTwitterEmailYummlyTumblrStumbleUponWhatsAppGoogle+

Rasmalai, a dessert originating from the land of the Royal Bengal Tiger is worthy of being served to Royalty! If you have ever had one, you would agree with me that this decadent melt-in-your-mouth dessert instills awe in you and gives you a feeling of “it must be complicated to make this”! Honestly, making this at home is a cake walk and will cost you a tiny fraction of the store-bought version. This simple procedure results in cottage cheese (1st picture) but has excess water for a dessert. Once the excess is squeezed out, you get a firm but moldable… Continue reading

TARO ROOT IN TRES LECHES PUDDING

Taro Root Pudding
FacebookTwitterEmailYummlyTumblrStumbleUponWhatsAppGoogle+

It was Nachiket’s birthday last Saturday. This was in the time frame of the Indian festival Dusshera. I observe a 9 day fast during this period which translates into eating simple food once a day and No cake for Nachiket! I felt sorry for him. So I decided to make this fast-friendly vegetarian dessert. Taro root (A tuber very similar to potato in texture) and tapioca pearls (sabu dana) in a coconut milk and sugar is a very popular Chinese dessert. Nachiket is not very fond of coconut and eats it only when masked well. Since I was making this… Continue reading

WATERMELON SANDWICHES WITH GOAT CHEESE

Watermelon Sandwiches
FacebookTwitterEmailYummlyTumblrStumbleUponWhatsAppGoogle+

“Watermelon sandwiches are these amazing little treats. Soft creamy layer of cheese sandwiched between crunchy juicy watermelon, flavored to perfection with Basil and balsamic vinegar” – Nachiket I have mentioned that the above tantalizing (if you say so) description was given by Nachiket and not me. You know. Before my regular readers call my fib that I enjoyed a watermelon (For the inside scoop on this disclaimer, check my Tomato Slush recipe) Moving out of your house when you go to college is something that is not so common in India till date. Call this an overprotective, no-independence system or… Continue reading

GRILLED PEACH TART | EASY FRUIT PASTRY

Grilled Peach Tart
FacebookTwitterEmailYummlyTumblrStumbleUponWhatsAppGoogle+

A grilled peach tart is a must make if you are fan of summer and its bounty of juicy fruits. Easy to put together, light on your stomach as well as your hips 😛 I know I have mentioned this a few times before but it is H.O.T this summer and I just have to say it. The need to express my dislike for heat and sultry weathers is almost as strong as my need to binge-eat fruits to beat it! Fruits are one of the best ways to keep yourself cool, keeps your skin glowing and our systems function… Continue reading

MANGO SOOJI HALWA | AMBYACHA SHEERA (KESARIBATH)

Mango Kesaribath
FacebookTwitterEmailYummlyTumblrStumbleUponWhatsAppGoogle+

I had to make this mango sooji halwa or I wouldn’t have lived to see today. My mango-crazy husband almost gnawed through my brains to make Mango Mousse cake again (For heaven’s sake! I just cleaned the container a couple of days ago!)  Then again, who wouldn’t love mangoes if they looked like this?! Mango Sooji Halwa in plain English is a mango flavored cream of wheat pudding that comes together in 20 min. The aliases in the title are the same word written in languages that Nachiket and I grew up speaking. Any food called by the name your mom used… Continue reading

POACHED PEARS – WEIGHT WATCHERS & DIABETIC FRIENDLY

Poached Pears
FacebookTwitterEmailYummlyTumblrStumbleUponWhatsAppGoogle+

These poached pears for dessert were refreshing, something like we had never had before. They were an instant hit with both of us (remember the fussy-eater husband?)! Just the right amount of sweetness induced by palm sugar, this one is truly a dessert for weight watchers and diabetics alike. The summer makes me reach out for desserts so often!! Something cool and sweet is all I want! I reach out for fresh fruits too but I only keep wishing they looked fancier like an ice-cream or something! 😀 Well, poaching pears has been on my mind for a while now… Continue reading
