Croissant sandwich with an egg salad filling, an egg salad that is tossed is a mango flavored mayonnaise sauce; did your brain begin to salivate at the very thought of this amazing croissant sandwich? Mine sure did, despite the fact that I was sinking my teeth into this fantastic sandwich for lunch just a couple of days ago. I just can’t seem to have enough of it and I am pretty sure you would be chanting “egg salad croissant sandwich with mango mayo” too after you try it. Well, maybe not exactly that because it is too long a chant but you get my point right? 🙂

Croissants are the Gods of the bread world; The Supreme being that rises above the everyday mortal loaf of bread and bun. I don’t exaggerate when I say this, I truly feel that love for a croissant and more so for a croissant sandwich.

Making croissants from scratch requires some amount of elbow grease. I have attempted to make them and they turned out very well. You can find the recipe HERE. The photographs may sing another song altogether (they were shot even before I knew how to focus a camera!) but I can assure you that it is a great recipe that results in some soft, flaky croissants.

Whether you make a small batch or a large one, the effort required to make good croissants is almost the same. So, unless you are making huge batches of croissants, the effort seems a tad unjustified.  However, if you have a mom-n-pop shop close by that bakes fresh croissants everyday, you should totally grab a few.

Breakfast, lunch or dinner, you can never go wrong with a croissant sandwich. Add to the mix, an egg salad that is tossed in a mango mayonnaise and you will understand the enthusiasm behind my paragraphs of appreciation for something as simple as a croissant sandwich!

Here is the recipe for:

Egg Salad Croissant Sandwich


Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Serves: 2-3



    For the Sandwiches
  • 5 large eggs
  • 1 tomato sliced
  • 1 ½ cup Finely sliced cabbage
  • For the Mango Mayo
  • 1/2 cup Mayo
  • 1 tbsp Crushed pepper (chili flakes)
  • 1/2 tsp Crushed thyme
  • 1/4 cup Mango pulp
  • Salt to season
  • Dill for garnish (optional)


  1. Boil the eggs, peel and dice them to small bite sized pieces.
  2. Mix all the ingredients for the mango mayo with the diced egg.
  3. Cut the croissants into halves.
  4. Layer the sliced cabbage and tomatoes onto the bottom layer of the croissant.
  5. Sprinkle a pinch of salt over the tomatoes.
  6. Now place a generous helping of the egg salad onto the tomatoes.
  7. Garnish with dill leaves.
  8. Cover the sandwich and enjoy the ride!

My Take:

If you happen to have fresh mangoes on hand, you can also add a few chunks into the egg salad.

A few jalapenos can kick up the spice levels of the sandwich.
