Is it too bad that I have nothing much to share today? I mean, I have this great recipe for soft, light as air vanilla cupcakes, do I need more? Yes, I do. Google says so. My sweet, will-kill-you-with-his-tech-talks husband, installed a software when we started the blog that basically tells me “write more you ***** or you are as good as non-existent because you know you will never show up in a google search otherwise” And we all know how important google is. Getting your blog shunned by google is worse than being that geeky kid with glasses and a book on the school playground.   At least, the geeky kid gets noticed (if only to be bullied)!

In short, “As a blogger, whatever the kind you may be, a travel blogger, a fashion blogger or a food blogger like me, you always have to, have something valuable to say. Oh well, you better have something to say! 😀 For the most part, blogging is easy writing, stringing some facts together with interesting anecdotes, some own-life experiences, profound thought-provoking quotes, some numbers, statistics and last, throw some humor into the mix. Remind me again, did I say Blogging is easy?! Sorry, it must have been the low-blood-sugar talking. I need to grab a cupcake as I write.

Alright, let me tell you something. Something that has no two ways about it. These Vanilla cupcakes are frickin’ delicious. These vanilla cupcakes are super easy to bake! I might have misled you with a lie about blogging being easy but the best cupcake recipe being a breeze is true because men don’t lie on their deathbeds and women don’t lie with a mouthful of a delicious cupcake! That is a great saying! Errr….. at least, I tried to make one up! 😀

Here is the recipe for:

Eggless Vanilla Cupcake


Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Serves: makes 12 cupcakes



  • 1 1/2 cup All-purpose flour (Maida)
  • 1 1/4 cup apple sauce (or plain yogurt)
  • 1 1/2 cup Granulated Sugar
  • 3/4 tsp Baking soda
  • 1 1/2 tsp Baking powder
  • 3/4 cup Cooking oil
  • 2 tsp pure vanilla extract


  1. Sieve the all-purpose flour and set aside.
  2. Whisk the apple sauce (or yogurt) and sugar together until the sugar dissolves completely (you can feel no more crystals while whisking).
  3. Add baking powder, baking soda to the whipped mixture. Mix well again.
  4. Set aside for about 5 mins and allow the mixture to rest and bubble up slightly.
  5. Preheat the oven to 350°F
  6. Grease a muffin pan. Set aside. Or you can use cupcake liners which eliminates the process of greasing the pan.
  7. Add vanilla extract and cooking oil and mix with a light hand trying to keep the air pockets as intact as possible.
  8. Add the all-purpose flour in 2-3 batches and make sure the previous batch is folded in well into the mixture before adding the next one.
  9. Whisk until the batter is smooth and thick
  10. Pour the batter into the prepared pan and pat it on the counter to break any air bubbles.
  11. Bake it for about 20 min or till a toothpick inserted into the center of the cake comes out clean.
  12. Cool on a wire rack for at least 15 min.
  13. Remove your cupcakes. They are now ready to eat.
  14. Grab them for your breakfast or serve with a scoop of ice cream for dessert.

  2. hi.. Can I make this recipe sugar free by using applesauce in place of sugar and yogurt in place of applesauce? If so, what will be the quantity of applesauce and yogurt respectively? Thanks..

    • That won’t work Mishu. You will have to use honey/agave nectar in place of sugar. Quantity of honey, I am not too sure. About a quarter cup may be? I would recommend trial and error with small batches.

  3. I made your eggless vanilla cupcakes for my 10 year old nephew who is allergic to eggs. They were delicious, but I thought too greasy. Have you tried less oil? Do you think this would work. The flavor is perfect and they look good, just left my hands greasy. Thanks in advance for your input.

    • Thanks Priscilla! About the grease, I haven’t tried with lesser oil. Then again, My husband (who I make it for) has never complained about it. But I think you could cutting the qnty it in half and give it a try. Hope it turns out the way you want it 🙂

  4. My niece is has a high allergy to eggs. I am going to make these today. But I’m wondering if you can use coconut oil versus cooking oil?

    • Absolutely! Also, you can cut the quantity of oil in half. Since, somebody mentioned that they were a tad oily, i happened to try making them with half the oil and it turned out great! I shall update the recipe too. Happy baking! 🙂

  5. I followed directions perfectly and they overflowed and didn’t cook. Was it just me or is this recipe crap?

    • While I understand your frustration on not being able to have cupcakes (who wouldn’t get angry if they were denied cupcakes?!), I cannot say why that happened. Doubled the baking soda?? The rude comment, however was uncalled for! Either way, this recipe has given beautiful cupcakes every. Single. Time.
