I know I have mentioned this a few times before but it is H.O.T this summer and I just have to say it. The need to express my dislike for heat and sultry weathers is almost as strong as my need to binge-eat fruits to beat it! Fruits are one of the best ways to keep yourself cool, keeps your skin glowing and our systems function smoothly.

Peaches

Hmmm… I know that but practicing what you preach is like getting rid of a habit. You try hard but a-bit always remains. While I know how beneficial fruits can be, I confess to not eating them as often. Call me plain lazy but would I rather whip some upma (savory cream of wheat pudding) for myself than peel an orange! Yep! That’s how lazy I am 😀

However, summers here can be so harsh that I find myself scouring for fruits involuntarily! This grilled peach tart was a result of that. Tropical fruits and water straight from a coconut are what I miss most from back home. Peaches come closest to tropical fruits (in my opinion of course and you all know how weird I am not liking watermelon and stuff). I got a whole lot of peaches (none from the currently listeria infected lot :P), oranges, avocados and have treated myself to some amazing fruit custard, fruit skewers, fruit salad and of course a fruit tart.

With the grilled peaches adding a summery/barbecue-y flavor to the tart, this grilled peach tart recipe with subtle cheese and blueberry flavors will bowl you and your family over instantly!

GRILLED PEACH TART | EASY FRUIT PASTRY

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Serves: 4-6

GRILLED PEACH TART | EASY FRUIT PASTRY

Ingredients

  • 1 sheet of puff pastry thawed (as per the instructions on the package)
  • 1 tablespoon all-purpose flour, plus more for dusting
  • 3 large peaches, sliced and grilled
  • 2 tablespoons granulated sugar, divided
  • 1/2 teaspoon salt
  • 2 tablespoons cream cheese, softened
  • 2 tablespoon blueberry preserves
  • 1 tablespoon water
  • Vanilla ice cream for serving, optional

Directions

  1. Line a baking sheet with parchment paper. Dust some flour on it.
  2. Open and spread the thawed pastry onto the floured parchment paper.
  3. Using a sharp knife, score the dough to form a 1-inch border leaving a marked square.
  4. Prick the dough inside the border using a fork; almost letting the air our so that the borders puff up more relative to the inside square.
  5. Sprinkle the border with 1 tablespoon coarse sugar. Bake in a preheated oven at 425°F until puffed and golden brown, 10-15 minutes.
  6. Meanwhile, whip together softened cream cheese with remaining sugar using a hand mixer on medium speed.
  7. Using a fork, gently press down the square inside the border of the dough.
  8. Again, gently spread the cream cheese in a thin layer over crust inside the border.
  9. Layer the grilled peach slices on the crust as desired.
  10. Bake for about 5 min. If crust begins to brown too quickly, tent loosely with foil.
  11. In a small bowl, vigorously stir together the blueberry preserves and water until thinned.
  12. Remove from oven and turn oven to broil. Brush crust and fruit with preserves. Return to oven 1-2 minutes until lightly caramelized being careful not to burn the crust.
  13. Remove tart from oven and set on a wire rack to cool slightly. Serve warm or room temperature with a scoop of vanilla ice cream, if desired.

My Take:

You can also add some berries along with the peaches.

A grilled pineapple tart would taste out of the world too.

  3. I always make savory tarts (tomatoes,mushrooms, spinach, feta) with puff pastry but never got to try sweet one! May be, coz I hardly eat anything that’s sweet 😛 I’m sure my hubby would love this one… Soon to try!!!
