I used a shortcut method to make Maharashtrian Masale Bhaat or Garam Masala rice (as long as I am in the zone of making things easy for you, why don’t I simplify the name also right?). So, there. The literal translation of the authentic wedding food of Maharashtra just simple means Garam Masala rice!

I am one of those lucky few who have the influence of multiple cultures and cuisines play a major role in their childhood (some call these lucky few “Confused” 😛 ). Not only am I from India which is a mixed bag of cuisines (every state has a different one!), I was born into a family from one state who migrated into another state, brought in relatives from a third state and I married a man from different state altogether! Don’t even get me started on the multicultural friends I have or the Oriental, Continental and Western influences on Indian food.

Phew! Confused I may be but I get to maintain a blog with recipes from all over the world! Yay!

Alrighty then. The traditional Maharashtrian Masale Bhaat has a mixture of spices that have to be dry roasted and blended into a paste and then cooked which can be quite time consuming. To make it simple for you, my readers, I have created this short cut method. So not true!!

Honestly, my spice grinder broke down (due to excessive use) and I had a sudden craving to eat Masale Bhaat that very day! Recollect Murphy ’s Law about things going wrong? Although my favorite one of the laws is : The chance of the bread falling with the buttered side down is directly proportional to the cost of the carpet 😀 They are all so true. Anyways, to satiate my insane craving, I adopted the shortcut method of just these 5 steps and it was so delicious! I made me wonder why I bother making fresh masala paste usually (of course! the aroma and richness!). But, on a time crunch (which happens more often than you would think) and a lazy stint going on, this recipe will come handy! And, you will not be able to tell it apart from the exhaustive method!

So, here’s the recipe for the easy

Maharashtrian Masale Bhaat

MAHARSHTRIAN MASALE BHAAT MADE EASY

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Serves: 3-4

MAHARSHTRIAN MASALE BHAAT MADE EASY

Ingredients

    For step 1
  • 2-4 green chili (bird’s eye chili)
  • 3 tbsp oil
  • 1 inch cinnamon
  • 1 bay leaf
  • 1 tsp cumin seeds
  • For Step 2:
  • 1 cup diced veggies (of your choice, I used Eggplant, ivygourd, carrots, potato and peas)
  • For Step 3:
  • 2 tbsp goda masala (or garam masala)
  • 1 tsp turmeric powder
  • 1 tbsp cumin-corriander powder (jeera-dhaniya powder) – optional
  • 2-3 tbsprated coconut (fresh or frozen)
  • Salt to taste
  • For Step 4:
  • 1 cup rice (I used Basmati) – washed and soaked for 5-10 min while you dice veggies
  • For Step 5:
  • 2 1/4 cup water

Directions

  1. Heat oil in a deep pan and add all ingredients listed under step 1. Sauté for a min.
  2. Add the diced veggies in and mix well.
  3. Add all the dry spice powders listed under step 3 and mix well.
  4. Add the soaked rice (not the water) and sauté for 1/2 min.
  5. Add the water. Cover and cook till all the water is absorbed and rice becomes fluffy.

My Take:

You could replace oil with ghee in the recipe but ghee comes with its share of high calories.
