The fresh goodness of Okra that can be enjoyed with your dinner in just 5 min? Is it a dream come true? As much as you want yourself and your family to eat healthy every meal with greens, veggies and salads, it gets pretty taxing to ensure that. Viola! The 5-minute microwave okra to your rescue!

5 minute microwave okra

You all know about the new addition to my family right? Alright, you one-directional minds! I did not have a baby! I told you a while ago about my trip to India for my brother’s wedding? Yes, I am speaking about my sister-in-law, a new sibling and friend within the family.

The time I could spend with her was limited considering the newly-wed chaos that happens in India and the fact that my trip was short-lived. However, there were a couple of days when my Brother had to rush out of the country for work and my parents were out of town too when I got to bond with the sweet, shy & gentle girl 🙂 It was among the conversations we had during the time that she mentioned about a super quick okra recipe. Because, let’s face it peeps! Conversations with me would be incomplete without food and recipe talk, wouldn’t it?

In the following week, when my dad happened to bring home some young green okra from the farmer’s market, Raswitha (my SIL) carefully washed the okra, laid them out in a microwave safe dish and brushed each cooked okra meticulously with a liberal amount of ghee (clarified butter), seasoned them with salt and said “Don’t skip the ghee. It adds a lot of flavor”. I swear, she was so meticulous about it that the whole process looked like glass making! But that girl is way too graceful and mellow. For a bull in a china shop like me, her graceful process wouldn’t look anything less than like glass-making, right? 😀

So, I went rogue on the recipe and used oil on half my okra (for the benefit of my vegan audience) and ghee on the other half. While the ghee tasted heavenly to my Indian palette, the olive oil was surprisingly as delicious and flavorful.

5 minute microwave okra

For all you busy-bees out there, here is some health that you can whip up in 5 minutes! Here is the recipe for:

5-minute Microwave Okra



Prep Time: 2 minutes

Cook Time: 3 minutes

Total Time: 5 minutes



  • Fresh green okra
  • 1-2 tbsp olive oil or ghee
  • Salt to season
  • 1 tbsp paprika
  • 1 tbsp coconut shavings (optional)


  1. Wash the okra and pat them dry
  2. Slit the okra along its length
  3. Place them in a microwave safe dish. Avoid overlapping and place them in a single layer.
  4. Microwave them on high for about 3 min. this might vary with the power of your microwave to a max of 4/5 min.
  5. Brush them all with olive oil or ghee.
  6. Sprinkle the salt and paprika.
  7. Garnish with coconut shavings and serve hot.

My Take:

You can also garnish with grated parmesan and sprinkle a dash of crushed black pepper.

For the best taste, use ghee. A little bit of indulgence never hurt anyone!

  3. I have a question. Why do you coat oil /ghee, salt and paprika after the microwave step ? I would have thought that one should coat with oil and spices before you microwave them . That’s what is done before putting them in a conventional oven .
