Oven Roasted Okra?? Something this simple is my post when the whole world is going gaga over how to make elaborate Thanksgiving meals and how to use the Thanksgiving leftovers in new ways? Hmmm… In that case who’s going to cater to the needs of the weary cook who wants to whip up something in a jiffy? So, I decided to post the recipe for this quick and easy oven roasted okra!

Oven Roasted Okra

Light as air with a delicate crunch

Now, forget everything I said. Its Bull Fudge. I was too lazy to take pictures of my dishes (the weary cook part holding true) and was busy putting the “shop till you drop” slogan to some good use! Implication=Rummaging through my existing photo library and posting a recipe! 😀

Tender Okra

Last week, you read the recipe for “Baked Cauliflower” in which I mentioned that I will have a couple more Under 30 minutes delicacies soon. I remembered my promise.

Recipe for Oven Roasted Okra

Prep Time: 8 minutes

Cook Time: 17 minutes

Total Time: 25 minutes

Serves: 2-3

  • 250 g /10 Oz fresh and tender okra
  • Salt to taste
  • 1 tsp red chili powder (paprika)
  • 2 tbsp oil

  1. Wash and pat the okras dry (Wet okra tends to get very slimy)
  2. Slit the okras into desirable sizes
  3. Toss it with oil, salt and chili powder (make sure they are evenly coated in oil and spice)
  4. Transfer them onto a baking sheet and bake in a preheated oven at 400°F for 15-18 or until the okra turns crisp and golden. This depends on the thickness of the pieces.
  5. Serve as a side with your (not so) favorite dish!

My Take:

Tender okra when bent, springs back to form; while the non-tender ones snap and break.

Use Cajun spice powder instead of red chili to add an interesting twist to the dish. Add ginger juice/lemon juice to the roasted okra for different flavors.

Don't have an oven? Never mind. Use a broad bottom pan and roast on medium heat for 25-30 min
