PUMPKIN ROSEMARY SOUP – Rich, Creamy, No Broth Soup!


I opened the front door last night and my heart almost skipped a beat! There was a monster in front of me. Those horror-thriller movies’ green-faced monster. Yes it’s that time of the year when all my neighbors enjoy scaring the life out of scared little gals like me! 😛 So the monster was a huge poster hung on my neighbor’s front door as a part of the Halloween decor but it sure scared me at 10:oo p.m.!

Today’s weather in Texas was chilly and breezy. I decided to make a soup for the evening and my encounter with the neighborly monster reminded me of the pumpkin lying in my refrigerator. So I decided to dive into the Halloween festivities with a pumpkin soup.

I dug into the ingredients I had at home and made this soup. No broth, no stock yet so full of flavor. Here’s my recipe for:

PUMPKIN ROSEMARY SOUP – Rich, Creamy, No Broth Soup!

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Serves: 2

PUMPKIN ROSEMARY SOUP – Rich, Creamy, No Broth Soup!


  • 1 tbsp butter (I use olive oil butter. Exactly the same flavor but much lesser fat)
  • 1 cup diced yellow pumpkin
  • 4-5 pearl onions
  • 1 tsp finely chopped garlic
  • 1/2 tsp fresh rosemary
  • 1 1/2 tsp crushed black pepper
  • 1/2 cup milk
  • Salt to taste


  1. Melt butter in a saucepan.
  2. Add garlic and shallots & sauté for about 2-3 min.
  3. Add diced yellow pumpkin & rosemary. Sauté for 2-3 min.
  4. Cover and cook for further 3 min or until pumpkin is soft.
  5. Add salt & pepper and stir.
  6. Let it cool down to room temperature.
  7. Blend it to a smooth paste. The resulting mixture will be very thick and creamy.
  8. Transfer the pureed mixture back to the saucepan and let it simmer.
  9. Take the pan off heat. Add warm milk and stir.
  10. Serve hot.

My Take:

Heavy cream can be substituted for milk but the pumpkin puree in itself is so rich and creamy that I prefer milk.

Watch your guest amazed when you serve this oh-so-full-of flavor soup and tell them that is a no broth pumpkin soup!

  1. Thanks for reminding me about the pumpkin in my fridge. A question though ? Is there any other alternative to rosemary ? I know this is to add flavor, but is there anything else which can come close..

    • Hey Pooja!
      You might not be able to get the same flavour. But you can get different and amazing flavours using Thyme or parsley. If you do not have any fresh herbs on hand, go for the dried herb mixture (mostly sold as Italian seasoning). Enjoy your warm pumpkin soup!:)
