Raita is prepared in many ways throughout India to serve as a side with food, mainly rice. I love the taste of vegetable raita, especially the blend of tomato juice with yogurt.

It took me a while to attain perfection and mine would end up with lumps of yogurt until I just stumbled upon the idea of rectifying that one fine day!

Serves: 3-4

RAITA | VEG SALAD WITH YOGURT DRESSING

Ingredients

  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped cucumber
  • 1/4 cup finely chopped tomatoes
  • 2tbsp finely chopped green bell pepper (capsicum)
  • 1 cup yogurt (curd)
  • 1 pinch asafetida (hing)
  • 1 tsp cumin powder
  • Salt to taste

Directions

  1. Beat the yogurt to make it smooth with no lumps
  2. Fold in the asafetida, cumin powder and salt, mix well
  3. Pour the yogurt dressing onto the chopped vegetables , mix and serve as a side with Indian rice dishes

My Take:

You could add a pinch of red chili powder or chopped green chili for spice but the rice dish that the raita is served with is generally spicy and this is supposed to complement the dish by cooling your palette.
