Raw mango Salsa reminds me of the streets of India where the hawkers sell their wares from a hand-crafted bamboo basket.
A hot summer day, soaring temperature and the sun shows no mercy. Imagine yourself walking down the road lugging a heavy backpack. Now, imagine a basket in front of you. A basket full of raw mangoes some of them cut open with a dash of red paprika sprinkled between the slits made with a blade-like knife. Oh! The joy of paying a few pennies for a slice of that wonder-fruit, a bite of which will make you forget all about the skin-piercing heat. That is how I fell in love with mangoes, ripe or raw.
I made this Raw mango salsa to go with my Baked Potato Chip Cups. But of course, the two recipes are mutually exclusive. While the combination excites your taste buds, the two recipes on their own are no less seductive.
A blend of the three primal tastes, sweet, sour and spice, this raw mango salsa is as simple as just mixing the ingredients together. No blending, no Cooking! Serve it as a dip with your favorite chip or mix it with some puffed rice to create a bhel (A light Indian snack), this recipe is a keeper for sure!
