Make this Tofu scramble recipe your go-to, for a lazy breakfast-in-bed kinda weekend or for the upcoming Mother’s day special brunch. Either way, I promise it will be a winner with you and your family. But of course! Right? It uses a minimum number of ingredients,it gets done very quickly, it is as creamy and soft like regular scrambled egg, and it is super healthy!
This recipe did not start off being a Mother’s day idea in particular but as I was making this the other day, my thought process went something like this:
“Oh boy! This is turning out to be lot easier than I imagined. It smells so good. And, it looks just like scrambled eggs! I bet I could fool Nachiket that this is actually scrambled eggs. Not that he would mind if I told him it’s tofu. He has begun to enjoy tofu off late. That’s good I guess. Or does it mean we are getting old? We now like healthy stuff? Ewww…
But, I have always liked healthy food. Stir fries, Salads, Vegetables, Greens, I love all of them. Even broccoli. I have always been a fan of tofu too. I am sure I will love this tofu scramble. I wish Nachiket would make it and serve it in a beautiful platter and bring it over to where I am sitting.
Sigh! He does not do that very often! When have men ever done it voluntarily?! Even the so called chefs do not do it for their women, I am sure! Unless, it is Valentine’s day or Women’s Day or Mother’s day! Of ya! Tofu scramble for Mother’s day brunch sounds awesome! The recipe is so simple, even a kid could pull it off. Or even a lazy husband like mine for that matter!”
And, the thoughts continued into gifts, and shopping and then spiraled out of control to Spring sales, floral dresses, Coupons that I received in the mail and… never mind! The rest of it would not interest you too much 😀
In short, make this quickie meal for your mom or the special mom-person in your life and watch them enjoy your chef-like hand crafted delicacy.
PS: Did I tell you that you can serve this with toast, or with Indian flatbread( Naan, roti) or even rice!
