Make this Tofu scramble recipe your go-to, for a lazy breakfast-in-bed kinda weekend or for the upcoming Mother’s day special brunch. Either way, I promise it will be a winner with you and your family.  But of course! Right? It uses a minimum number of ingredients,it gets done very quickly, it is as creamy and soft like regular scrambled egg, and it is super healthy!

Tofu Scramble

This recipe did not start off being a Mother’s day idea in particular but as I was making this the other day, my thought process went something like this:

“Oh boy! This is turning out to be lot easier than I imagined. It smells so good. And, it looks just like scrambled eggs! I bet I could fool Nachiket that this is actually scrambled eggs. Not that he would mind if I told him it’s tofu. He has begun to enjoy tofu off late. That’s good I guess. Or does it mean we are getting old? We now like healthy stuff? Ewww…

But, I have always liked healthy food. Stir fries, Salads, Vegetables, Greens, I love all of them. Even broccoli. I have always been a fan of tofu too. I am sure I will love this tofu scramble. I wish Nachiket would make it and serve it in a beautiful platter and bring it over to where I am sitting.

Sigh! He does not do that very often! When have men ever done it voluntarily?! Even the so called chefs do not do it for their women, I am sure! Unless, it is Valentine’s day or Women’s Day or Mother’s day! Of ya! Tofu scramble for Mother’s day brunch sounds awesome! The recipe is so simple, even a kid could pull it off. Or even a lazy husband like mine for that matter!”

And, the thoughts continued into gifts, and shopping and then spiraled out of control to Spring sales, floral dresses, Coupons that I received in the mail and… never mind! The rest of it would not interest you too much 😀

In short, make this quickie meal for your mom or the special mom-person in your life and watch them enjoy your chef-like hand crafted delicacy.

Tofu Scramble

PS: Did I tell you that you can serve this with toast, or with Indian flatbread( Naan, roti) or even rice!

Well, Here is the recipe that got done faster than I could think!

Tofu Scramble with Veggies


Prep Time: 8 minutes

Cook Time: 7 minutes

Total Time: 15 minutes

Serves: 2-3



  • 200 g or 7 oz pack of firm tofu
  • 2 cloves of garlic, minced
  • 1/2 cup diced peppers
  • 1/4 tsp turmeric powder
  • Black pepper to taste
  • Salt to season
  • 1-2 tbsp olive oil
  • Bread or Toast to serve


  1. Place the block of tofu on some paper towels. Cover it with paper towels and place some weight on it to drain the excess water.
  2. Meanwhile, dice your peppers.
  3. Heat the olive oil in a pan. Add the minced garlic and sauté till golden.
  4. Add the diced peppers, and cook for about a min.
  5. Add the turmeric, salt and crushed black pepper. Reduce the heat to low while you work on the tofu.
  6. Use a masher or a fork to mash the tofu crudely to look like regular scrambled eggs.
  7. Add the tofu into the pan.
  8. Stir on medium high heat for about 3-5 minutes.
  9. If the tofu begins to dry out, add a tbsp. of water, cover and cook for the rest of the time. By doing this, you can ensure that the tofu remains soft and creamy.
  10. Serve hot with buttered toast.

My Take:

If you are not a fan of bell peppers, diced mushrooms and spinach go very well with tofu.

You can also increase the spice level by adding some sliced jalapenos.

Addition of fresh rosemary can kick up the flavor profile of this humble scrambled tofu.
