I have mentioned that the above tantalizing (if you say so) description was given by Nachiket and not me. You know. Before my regular readers call my fib that I enjoyed a watermelon (For the inside scoop on this disclaimer, check my Tomato Slush recipe)

Watermelon Sandwiches

Moving out of your house when you go to college is something that is not so common in India till date. Call this an overprotective, no-independence system or a system that thrives on family values and togetherness; I choose to stay clear of the debate (atleast for today :D). Nachiket, was among those few who moved out of home for his grad studies and has never gone back to live there ever since. Not by choice; you see, the city he is from is not exactly a land of opportunities in his career of choice.

 Those years away from home, bad food from the hostel mess, inedible meals cooked by the maid; all of it made him a very undemanding person. He never used to yearn or ask for a meal of his choice. All he needed was just a morsel to quell his hunger. That is until he realized I can cook (more so, until I started blogging)! 😀 Although, I admit his demands are few and those few are subtle too (“It’s been quite long since you baked a cake” is his way of saying “I W.A.N.T Cake!).  A gem of a guy, I know (note the sarcasm in between the words) 🙂

The point of my story was this. When this undemanding person was sitting at the table, cutting up slices of watermelon for himself and eating it all alone, I felt sorry for him! The boy who ate Styrofoam (that’s what watermelon tastes like to me :P)! That was when I decided to jazz it up and make something out of watermelon for him, Watermelon sandwiches. Also, my blog deserves variety; wouldn’t you agree?

Watermelon Sandwiches with goat cheese

Now, you can see from the recipe that I have not gone too far into the jazzing-up. The watermelon sandwiches retain the true form and heightens those.

Try this simple recipe for that undemanding person in your life or for a party! Here is the recipe for:

Watermelon Sandwiches


Prep Time: 10 minutes

Total Time: 10 minutes

Serves: 1-2



  • Sliced Watermelon (12-16)
  • 2-3 tbsp Goat cheese (Vegan options under the My Take section)
  • Few leaves of basil
  • 1 tbsp balsamic vinegar
  • Salt to season
  • Crushed Black pepper to season


  1. Slice the watermelon in a desired shape.
  2. Apply a thin even layer of goat cheese on one slice. Close it with another.
  3. Repeat with all slices.
  4. Arrange on a serving platter.
  5. Adorn them with fresh basil leaves.
  6. Sprinkle salt and crushed black pepper to suit taste.
  7. Drizzle balsamic vinegar over the slices.

My Take:

Crushed black pepper can be replaced with some crushed red peppers (chili flakes) too.

Cashew cheese can be used in place of goat cheese for a Vegan option.
